Domaine Louis Carillon & Fils

 

HISTORY OF DOMAINE: The Carillon family can trace its lineage in Puligny Montrachet back to 1520. We began our relationship with the Carillons in 1983 working with Louis Carillon who has since been joined in producing these extraordinary wines by his two sons, Jacques and Francois.

COMPOSITION OF DOMAINE: The Carillon domaine comprises a total of 12 hectares of vineyards. The holdings in Puligny, accounting for 8 hectares, are supplemented with one hectare in each of Chassagne Montrachet, Mercurey and Saint Aubin, with an additional hectare planted in parcels that yield Bourgogne Rouge and Aligote.

In the village appellation of Puligny, the Carillons own 11 separate parcels totaling about 5 hectares. Approximately 40% of the vineyards utilized in making the Puligny Villages are located on the Chassagne side of Puligny, notably within "Enseigneres". In the 1er Cru and Grand Cru appellations, the Carillons have 1/2 hectare in Champs Canet, one hectare in Perrieres, 1/4 hectare in Referts, 1/2 hectare in Combettes, and a tiny slice (0.12 hectare) of Bienvenues Batard Montrachet.

METHOD OF VINIFICATION: A classic vinification is followed here after a manual harvest. The whites are barrel fermented and barrel aged. There is a small per cent of new oak used and, in fact, some of the Village wine is aged in larger foudres rather than small barrels. Batonnage is practiced to some extent. The wines are assembled in stainless steel prior to bottling which usually occurs in early spring approximately 18 months after harvest.
