HISTORY OF DOMAINE: The Ferret family began the domaine in 1760. Colette Ferret is the current proprieter having assumed direction of the domaine upon the death of her mother, Jeanne Ferret in early 1993. The domaine currently owns 15 hectares of vineyards. The first bottling of wine under the Ferret label occurred in 1942 and now approximately 40,000 bottles are produced on an annual basis.
COMPOSITION OF DOMAINE: Wines from seven separate vineyard sites within the village of Fuisse are bottled each year. The entire productions of "Les Sceles", "Les Vernays" and "Les Moulins" are bottled exclusively for distribution in the United States by Rosenthal Wine Merchant. The other four "crus" are "Le Clos", "Les Perrieres", "Tournant de Pouilly" and "Les Menetrieres". A major portion of the vineyards are planted to old vines, e.g. the average age of the vines in the Les Menetrieres, Le Tournant de Pouilly and Les Perrieres vineyards all approach 40 years. The vines in Le Clos are divided between young and old plantings with an average age of 20 years. These vineyards are considered among the very finest sites within the appellation of Pouilly Fuisse.
METHOD OF VINIFICATION: The harvest is done entirely by hand. Both alcoholic and malolactic fermentations are done in barrel with extensive lees contact being fundamental to the "elevage".
Between 25% and 50% of the wines are aged in new oak, depending on the cuvee. The "Les Sceles" is bottled just prior to the harvest of the succeeding year (12 months in barrel); the "Les Vernays" and "Les Moulins" normally see 15 months of aging prior to bottling and the remaining "crus" [Perrieres, Le Clos, Tournant de Pouilly, Les Menetrieres] are usually bottled between 18 to 24 months after the harvest.
