"Schiappa", in the Ligurian dialect, refers to an oil of superlative quality because it is from the first press of the taggiascha olive, pressed at less than half the standard pressure of "extra virgin" oils, is unfiltered , and results in an oil of uniquely golden color and rich, buttery texture.

Giordano Mazzariol

From this tiny "frantoio" [meaning "olive press" in Italian] on Italy's Ligurian coast, the Armato family provides us with this intensely fruity, first cold-pressed olive oil. As is characteristic of the region, this exceedingly low acid oil offers a more delicate and fruity alternative to its greener and more rustic Tuscan counterpart.  Following is a whole pantry of products which naturally derive from their olive oil business.
